An old city · A long meal

A long meal
in the Banarasi
tradition.

A modern Indian dining room rooted in the city on the Ganga — the food of the ghats and gullies, served the way it has been for generations.

Varanasi · the ghats on the Ganga

The city on the Ganga.

Banaras is another name for Varanasi — one of the world's oldest living cities, set along the sacred banks of the Ganges. As Mark Twain once wrote, it is "older than history, older than tradition, older even than legend."

A city where every alley whispers stories and every flame carries centuries of ritual. Here, food is not just a meal — it is an experience.

We took the name because it sets that expectation. What you find at this table is rooted in that tradition — the soul of one old city, brought to yours.

A short list, cooked long.

The menu moves from the tandoor to the fire — chaats and small plates to open, slow-built gravies, biryanis sealed and opened at the table. Four anchors below; the rest of the room is on the page that follows.

Slow-cooked

Nalli Nihari

Fall-off-the-bone lamb shank slow-cooked in a velvety Nihari sauce with roasted spices, ginger and herbs, prepared in traditional Banaras style.

Tandoori

Butter Chicken

Tandoori chicken thigh fillet in a buttery sauce of tomatoes and smoky fenugreek.

North Indian

Saag Lamb

A North Indian specialty featuring tender lamb cooked with pureed spinach, onions and warming spices for a hearty, flavourful curry.

Vegetarian

Paneer Lababdar

Paneer delicately folded into a robust lababdar gravy of roasted tomatoes, onions, butter and cream, enhanced with hand-ground spices for a balanced richness and subtle smokiness.

Long tables. The tandoor at your back. The evening already underway.

The room holds itself still. A single tandoor at the back of the kitchen that you can hear before you can see. The room is built for two-hour dinners — for the meal to find its own rhythm rather than be hurried along.

The food of the ghats does not hurry. We have built a room that learns from it. — from the kitchen
